2 directions: 'Preheat the oven to 325F and set rack in center of oven. Set 12 custard

6 In a saucepan scald the milk and cream with the vanilla bean (slight scum on top). Remove

10 In a bowl combine the eggs and sugar. Add the slightly cooled milk mixture. Pour
11 the custard through a strainer into the cups. Pour hot water into pan to ½”. Bake
12 in oven for 40-45 min. or until knife inserted in center comes out clean. Let
16 Place about 2 T. turbinado sugar evenly onto top of each custard. Place under
17 a broiler or use a torch to caramelize—watch carefully as it burns easily!'
