2 directions: 'Make the sauce: Roast the poblanos directly over a gas flame or on
5 baking sheet 4”es below a very hot broiler, turning regularly, until
7 the skins have blistered and blackened on all sides, about 5 min. for
9 an open flame, about 10 min. under the broiler. Place in a bowl,
11 cover with a kitchen towel and, when handleable, rub off the blackened
13 skin, tear open and pull out the seed pod and stem. Roughly chop and
15 put in a blender. Add the spinach.
18 In a medium (3 qt.) saucepan, combine the milk and broth, set over
20 medium-low heat to warm. In a large (4 qt.) saucepan, melt the
22 butter (or heat the oil) over medium heat. Add the garlic and cook
24 for a minute to release its aroma, then add the flour and stir the
26 mixture for a minute. Raise the heat to medium-high. Pour in the
28 warm broth mixture and whisk constantly until the sauce boils. Reduce
30 the heat to medium and simmer for 5 min. Remove from the heat. Pour
32 half of the hot sauce into the blender with the chiles and spinach.
34 Cover loosely (put a towel under the lid and do not close tightly) and
36 blend until smooth. Pour the mixture back into the saucepan with the
38 remaining sauce. Taste and season with salt, usually about 2
43 Finish the enchiladas: Heat the oven to 350F. Smear about 1 C. of the
45 sauce over the bottom of a 13x9” baking dish. Stir 1 C. of the sauce
47 into the chicken. Lay half of the tortillas out on a baking sheet and
49 lightly brush or spray both sides with oil. Bake just to warm through
51 and soften, about 3 min. Stack the tortillas and cover with a towel
53 to keep warm. Working quickly so that the tortillas stay hot and
55 pliable, roll apportion of the chicken mixture up in each tortilla,
57 then line them all up in the baking dish. Douse evenly with the
59 remaining sauce and sprinkle with the cheese. Bake until the
61 enchiladas are hot through (the cheese will have begun to brown),
63 about 20 min. Garnish with the cilantro.'
