3 \ Fish Fillets (large flounder and fluke, haddock, hake, cod) cut\ninto 4 thin\
4 \ (less than ¾”) slices\n3 T. Spiced Seafood Salt or Cajun Seasoning\n\nTo make\
5 \ the batter:\nCombine the flour, cornstarch, beer, egg and salt in a large mixing\
6 \ bowl and mix well. The batter will be very light—slightly thinner than a regular\
7 \ pancake batter. Cover and refrigerate for at least 20 min., or up to 3 hours.\n\
8 \nLine a baking sheet with paper towels. Heat 3”es of oil to 375F in a 4- to\
9 \ 5-quart Dutch oven over medium heat or in a deep fryer.\n\nWhile the oil is\
10 \ heating, dry the fish fillets between several thicknesses of paper towels. Season\
11 \ with the spiced salt. Drop fillets into the batter and toss with tongs to coat\
12 \ evenly.\n\nWhen the oil is hot, lift the fillets one by one from the batter\
13 \ with the tongs, letting excess batter drip back into the bowl, and lower them\
14 \ into the oil, holding each fillet suspended in the oil for a few seconds to\
15 \ set the batter and prevent it from sticking to the bottom of the pot. The temperature\
16 \ of the oil will drop when the fish is added, but you overheated the oil to 375F\
17 \ to compensate for this. Don’t let the oil come back over 350F once it recovers.\
18 \ Fry the fillets until deep golden brown, about 5 min. Transfer them to the\
19 \ paper towel-lined baking sheet with tongs. Serve the fish hot with tarter sauce,\
20 \ lemon wedges, and malt vinegar.\n\nTarter Sauce: 4 C.\n3 C. Hellman’s Mayonnaise\t\
21 \tJuice of ½ Large Lemon (2 T.)\n½ Onion, minced (⅓ C.)\t\t\t¼ C. minced fresh\
22 \ Italian Parsley\n4 Medium Dill Pickle Spears, minced (½ C.)\n2 T. Capers, rinsed\
23 \ and chopped\t\t2 Hard-Boiled Eggs, finely chopped\n½ t. Kosher or sea salt\t\
24 \t\t½ t. black pepper\n\nCombine all together. Cover tightly, and refrigerate\
25 \ until ready to use. Keeps 1 week."
