sci-mathematics/gimps: add Paolo Pedroni as proxy maintainer.

This package reverted to sci-math after tomka's retirement. Paolo was
working with tomka before his retirement, however, and Paolo has been
submitting the fixes for this package. He would like to remain as a
proxy maintainer under the new management.

This commit adds Paolo and the Proxy Maintainers project to metadata.xml.
