sci-physics/root: backport ebuild fixes to older versions

- Update REQUIRED_USE and dependencies
- Use usr/lib (like LLVM) to avoid ROOT bug
- Create versioned symlinks to binaries to easily allow
  running a specific version of ROOT when more than one
  version is installed
